Here are some personal chef reviews that I’ve received since I started European Personal Chef back in 1999:
Beginning with Hors d’Oeuvre of Grilled Lamb Lollipop with Port-Currant Sauce, and then Seared Peppered Ahi Tuna with Wasabi Cream Cheese, Red Pimento & Wasabi Caviar on a Multi-Grain Baguette.
Continuing with Starters of Smoked Salmon topped with a Jumbo Sea Scallop & Caviar with Basil Sauce, and then Chilled Tuna Tartare Timbale with Avocado, Grapefruit, Lemon Crème & Citrus Butter.
Following with Entrées of Stuffed Lobster Tail with Shrimp & Crab, and then Petit Filet Mignon Stuffed with Spinach-Blue Cheese, and topped off with a Dessert of Chocolate Lava Cake with Vanilla Bean Ice Cream with Strawberry Sauce & Port-Currant Sauce.
For each of the six courses, Chef Julio ensured our paired wines were flowing. Even as busy as he was preparing and serving food made to perfection, he was gracious with the guests’ culinary questions and an integral part of the dining experience throughout the night with his insights and reflections on food and life.
There is a lot of time pressure and skill involved in preparing and cooking these complex levels of dishes while simultaneously entertaining guests without imposition. I highly recommend Julio for your next special event. Amidst the planning for our celebratory evening, we received news our dear friend had lost his battle with cancer. We were left spinning and life went on hold. With the party only days away, I struggled to finalize anything and questioned if it was right to plan such a thing. Chef was mindful and compassionate through our grief, only offering words of warmth and encouragement, never making me feel pressured to make the decisions I was at the time unable to make. After much trepidation it was clear we should go on as planned and let the healing begin.
February 2nd was the day. Chef arrived and made our kitchen his own. I was still a mess, arriving back in Orange County late that same morning, one day after attending the funeral. My stress gradually melted as I realized my house was filled with the most heavenly aromas….it was incredible! The beautiful menu he prepared unfolded with great rhythm and ease over the next couple hours. Every mouthful was a conversation piece and I knew undoubtedly our guests were treated to something so incredibly special that night.
Once it was time to wrap up I can honestly say I would have loved to help get the kitchen back in order…..except it was already perfect. I was in awe and felt quite humbled. The care and time spent to leave our home in a condition that was better than what he walked into hours before reaffirmed we made the best possible decision choosing Chef Julio.
